PASTA FRITTERS with SRIRACHA MAYO

Is there any one like me who gets excited over leftover pasta?
These types of meal really speak to my ‘economy of efforts’ boat mentality.
It may take a bit of organizing and a little extra planning of your meals,
but if you are going to cook up some pasta why not use the energy once?
(effort, fuel or electricity, and that precious water)
 
 
PASTA FRITTERS with SRIRACHA MAYO
2 cups cooked angel hair pasta
1 cup grated carrots
1 cup grated zucchini
1/2 cup grated onion
1 clove garlic, grated
1/2 cup fresh parsley, chopped
4 eggs
1/4-1/2 cup Panko
sea salt and pepper
cooking oil
1-2 tbsp Sriracha sauce
1/4 cup mayonnaise
In a large bowl mix all your fritter ingredients from the list above (minus the oil, Sriracha and mayo)
Heat the oil in your fry pan or grill sheet.
Scoop portions of the fritter mixture into the hot pan (about 1/3-1/2 cup each scoop)
Fry until browned and crispy on both sides.
Mix together mayo and Sriracha as a spicy ‘go with’.
These fritters are complete on their own (protein, vegetables and pasta)
or served with a fresh salad.
