LAMB with ORZO, OLIVES and FETA

For your next rainy chilly evening

when you are craving something packed full of flavour,

something that hugs you like a warm blanket,

try this easy stir-up.

LAMB with ORZO, OLIVES and FETA

1 lb ground lamb

(substitute ground chicken or turkey if lamb isn’t available)

1 small onion, chopped (about 1/2 cup)

3 cloves garlic, chopped

cooking oil

1 tsp dried dill

1/2 tsp ground cloves

pinch dried chilis

sea salt and pepper to taste

2 cups canned diced tomatoes

1/2 cup sliced black olives

1 cup orzo

to garnish

1/2 cup crumbled feta

sprinkling of dried dill

lemon slices

Cook orzo then drain and set aside.

Sauté onion and garlic in a little cooking oil.

Add ground lamb and continue to sauté until lamb is browned.

Add seasonings and sauté for another minute or two.

Add tomatoes and simmer until the whole dish becomes a bit saucy.

Stir in olives and cooked orzo.

Adjust seasonings to your taste.

Serve in bowls with feta and extra dill sprinkled on top.

Add some fresh pita and a slice of lemon on the side.
