Here’s another really tasty and easy pressure cooker dinner.
…a mild combination of spices…
…juicy bits of browned chicken…
…stewed in the pressure cooker for a mere 8 minutes…
…an addition of chick peas and almonds and it’s all done…
MOROCCAN CHICKEN TAGINE
5 boneless chicken thighs cut into 1″ pieces
1 tbsp Moroccan spice
(1/2 tsp. cayenne 1/2 tsp. turmeric, 2 1/2 tsp cumin, 1 tsp. allspice, 1 tsp. cinnamon, 1/2 tsp. coriander)
2-3 tbsp flour
2-3 tbsp olive oil
1 garlic clove, minced
1 tsp fresh ginger, minced
1/2 cup onion, chopped
1 14 oz can tomatoes
1/2 dried apricots, roughly chopped
1 18 oz can chick peas
1/4 cup slivered almonds
Mix spices with flour and dredge chicken pieces.
Brown in batches in olive oil directly in pressure cooker.
Remove and set aside.
Add onions, garlic and ginger and sauté until fragrant.
Return meat to pot along with tomatoes, and apricots.
Place lid on cooker and when it reaches maximum pressure, set cooking time to 8 minutes.
Add chick peas and almonds and stir to warm.
…Serve over Couscous with a little Harissa on the side…
