Now that we are ‘almost’ into summer camping I’ve been putting together some easy cooking options for taking on the road. This recipe came from a Friend’s Fave submission and it makes the perfect addition to grilling season.
I mixed a small mason jar full to store in our camper pantry and cooked up some very tasty chicken today. So far I’ve tried it with fish (oh my…coat, flip and done to perfection in minutes), pork chops, and even used it to coat little turkey meatballs for an added crispy covering. And you should try it with burgers… first I added a 1/4 cup to my minced beef then dusted the finished patties with a layer of coating mix. Super yummy and juicy.
Since it was a rainy day, I fried these boneless chicken thighs inside. First coating with the mix and letting them sit a while allowing the crumbs and the meat to enjoy each other’s company then cooked then with a touch of oil and a very hot pan, I seared these babies until nicely browned on both sides then covered and reduced the heat to low for about 20 minutes until the juices ran clear. So good! So tender! So much flavour!

Jana’s Coating Mix
- Mixing bowl
- Two cup storage container
- 3/4 cups panko
- 3/4 cups finely grated parmesan
- 1/2 cup flour
- 1/4 cup dried parsley
- 3 tbsp corn meal
- 1 tbsp onion powder
- 1 tsp garlic powder
- 1/2 tsp dried chili flakes
- 1/2 tsp salt
- 1/2 tsp pepper
- Mix together and keep in an air tight container until ready to use (see Galley Kat Notes for ideas)
