I know I have been absent lately,
but we have been on a little summer adventure.

otherwise, here is another simple galley creation,
made from scratch, in my little galley,
at anchor with the New York Skyline in view.
Last night I made Stove Top Pita (to the basic recipe I added dried parsley, thyme and chilis)
which ended up more like Naan Bread.
It was a bit too sticky to roll out,
so I stretched it by hand, like pizza dough.
Just some warm water,
yeast, salt, sugar and olive oil, bread flour…
…and two hours later…
the makings of boat pizza…
So tonight, after a very vigorous day on the water,
we poured an evening cocktail
and while Captain heated up the barbecue,
I threw this together…
NEW YORK PIZZA: R.E.D. Style
makes 4 little pizzas
4 Naan bread
4 tbsp Gourmet Garden basil
2 cloves garlic, minced
2 tomatoes, sliced (our fave are the Kumatos)
8 slices fresh Mozzarella
Sea salt & pepper
Brush each Naan with Gourmet Garden basil,
Drizzle with olive oil
Top each with 4 slices of tomato
Next top with Mozzarella
Brush with more basil
Season to taste
Place on heated barbecue (best if you have pizza stones)
and cook until crust is a bit crisy and Mozzarella begins to melt.
