YUMMY DATE CAKE (Stove Top Version)

Dates to this cake is like bananas are to banana bread.
They make the most rich, sweet and ever so moist treat.
YUMMY DATE CAKE
2 cups pitted dates
2 cups boiling water
1-1/2 tsp baking soda
3/4 cups white sugar
2 tbsp dark brown sugar
2 eggs
1/2 cup unsalted butter, melted
1 tsp Chai spice mix
1/2 tsp sea salt
1-2/3 cups flour
Place dates, soda and boiling water into a bowl,
cover and set aside for 30 minutes.
In food processor puree dates and water until smooth
Whisk eggs and sugars together.
Stir in date puree
Stir in butter.
Add flour and salt mixing until combined.
Place batter in a 8″x8″
well buttered pan
or stove top Omnia pan.
Bake in pre-heated 350 ° oven
or in a covered Omnia pan over low heat for 25-30 minutes
until a toothpick inserted in the cake comes out clean.
….add to this rich moist cake
a swirl of caramel sauce
a dollop of whipped cream
and a sprinkling of finishing salt
and you have entered
dessert heaven!
EASY CARAMEL SAUCE
1/2 stick of butter
1/2 cup heavy cream
1/2 cup brown sugar plus 1 tbsp
1 tsp vanilla extract
Place all in a saucepan
Make sure the pan is at least twice the volume of what is inside
as the sauce boils up.
Bring to a gentle simmer and whisk for approximately 10 minutes
until thickened.
The caramel sauce should at least have some rum in it 🙂
Actually, by the second serving the sauce was a bit thick so I 'loosened' it up a bit with some dark rum. But now that you mentioned rum, wouldn't it be wonderful drizzled straight up over the plain cake. This is why the rum is always gone. :-/
