Here is a wonderful reprieve from all my salad recipes.
And because this was made in my stove top oven,
I wanted to test out a new method of greasing the baking pan with my homemade pan release…
If it works well, I’ll post the recipe for GOOP tomorrow…
CHEESY CORN TAMALE PIE
1 recipe for Jiffy Cornbread Clone Mix
1/2 cup melted butter
2 eggs, lightly beaten
1 cup plain Greek yogurt
1-12 oz can creamed corn
1-14 oz can corn niblets, not drained
sea salt and pepper
1/2 cup green chilis
1 generous cup grated aged cheddar
Mix Jiffy mix together with the butter.
Stir in eggs, then yogurt.
Fold in the rest of the ingredients until well combined.
Scoop batter into prepared pan.
For conventional oven:
Bake for about 45 minutes at 350 °
For Stove Top version:
Cook covered on pre-heated base, medium low for 45 minutes.

and don’t forget your fave hot sauce…
