MEXICAN FRENCH BREAD PIZZA

MEXICAN FRENCH BREAD PIZZA

what you will need for eight 6″ pieces

1 French baguette

2 sausages (I used 1 chorizo and 1 spicy Italian)

1 can refried beans

1 cup chopped tomatoes

1 cup chopped green onions

1 cup sliced black olives

1 cup shredded mozzarella

Slice baguette lengthwise then cut into 6″ pieces.  Depending on the length of the baguette it should  give you 8 pieces.

Remove sausage from casings and cook breaking up into small chunks as it browns.

Stir in refried beans to heat through.

Top each piece of bread with sausage mixture.

Dress with onions, tomatoes and olives.

Sprinkle top with cheese.

Grill on heated barbecue until cheese melts.

On a boat we have to be flexible (and I’m not talking just physically flexible).  Tonight the plan was to do the initial prep down in the galley then have Captain finish things off on the barbecue. Well!!  A squall (fierce immediate wind) appeared out of nowhere, bringing with it a spell of torential rain so I cracked open my trusty little fry pan with lid, heated up my one-burner alcohol stove and on medium heat cooked these until crispy and all melty.  And as with a lot of our meals onboard, there was enough leftover for a hearty breakfast the next morning cut into hand-sized sail-ready morsels.  Easy prep, versatile to cook and very little clean up.  If you want, this could easily be made without sausage for a tasty vegetarian meal.  Meatless Monday has just become so much easier.  Another option could be ground beef or chicken with some Mexican seasoning thrown in.  Did I mention versatile?
