EASY TACO SALAD

In a Mexican frame of mind for dinner today.  I made the beef mixture and quacamole in advance so when it was time to eat, I just reheated the meat, plated the chopped greens and minutes later we were ready to dig in.

EASY TACO SALAD

2 servings

what you will need

1 lb lean ground beef

1/2 cup chopped onion

1 tbsp cooking oil

3 tbsp taco seasoning (my DIY recipe here)

4 generous cups chopped baby spinach

1 large Roma tomato, chopped

3-4 tbsp pickled jalapenos, chopped for garnish

guacamole

 lime wedges

putting it together

In saucepan saute onion in oil until translucent.

Stir in beef

Sprinkle with taco seasoning and cook until no longer pink.

Divide chopped spinach between two plates.

Top with beef mixture.

Garnish with tomatoes and jalapenos, gucamole and lime wedges.
