GRILLED SALMON with EASY LIME BUTTER SAUCE

Cockpit dining doesn’t get much easier than this.  Remember that Quinoa Cabbage Salad (recipe here) that was so yummy?  Well, it was even better the next day.  And because it was Captain’s turn to grill, all I had to do was whip up the lime butter, pour some chilled wine and enjoy the view.

GRILLED SALMON with EASY LIME BUTTER SAUCE

what you will need

enough fresh salmon for two

salt and pepper

2 small zucchini

olive oil to drizzle

1 lime

1 garlic clove, smashed

3 tbsp softened butter

Season the salmon well on each side with salt and pepper and hand it over to the grill master.

A couple of zucchini, sliced lengthwise, salt and peppered and drizzled with olive oil then grilled, made the perfect veggie side.

While the fish is cooking, half the lime and squeeze the juice on the butter.

Grate the rind from that half lime, add the smashed garlic and whip the butter until all is creamy and smooth.

Save the other lime half to serve with the fish.

Serve the fish with a healthy dollop of lime butter and let is melt over the surface.
