Dinner doesn’t get any easier than this…
No preamble necessary…
…and no altering the recipe to suit the simpest of galleys.
2 – 4 sole filets
1/4 cup flour
sea salt & pepper
2 tbsp cooking oil
2 tbsp butter
1/4 cup butter
1 tbsp lemon juice
2 tbsp chopped Italian parsley
lemon wedges to garnish
Rinse filets and pad dry.
Season well with sea salt and pepper.
Dredge in flour, shaking off excess.
Heat oil and butter in saucepan.
Cook filet for approximately 3 minutes until golden.
Flip and continue to cook another 2 minutes until flesh is opaque.
Remove and set aside, tenting to keep warm
Now for the sauce…
Add butter, simmering until melted and frothy.
Stir in parsley and lemon juice (take care as it will splatter)
Plate the fish, spooning butter sauce over filets.
Sprinkle with additional fresh parsley and garnish with lemon wedges.
…Just add a glass of chilled chardonnay and a beautiful sunset…
