Green Eggs and Ham for Easter breakfast…
…a few simple ingredients…
…just a couple of minutes of prep time…
1 avocado
pinch chili flakes
1 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1 tbsp minced jalapeño
1 tbsp minced onion
2 tbsp minced parsley
healthy pinch of sea salt
smoked paprika for garnish
2 or 3 slices of Serrano ham
lemon slices for garnish
Mash eggs yolks until fairly smooth
Score avocado flesh while still in half shell.
Scoop into egg yolks and mash
Leave some small avocado chunks for texture
Stir in onion, jalapeno, parsely, oil, juice, and seasonings
The mixture doesn’t need to be fully combined
so you can see some green, some yellow.
Pile mixture into each egg white half.
Sprinkle with spicy smoked paprika
and serve with some Serrano ham and lemon slices.
…This must have been what Dr. Seuss had in mind…
