GREEN EGG SALAD SANDWICHES with BOAT SPROUTS

Now that we are back onboard for the season

I’ve started my garden-in-a-jar

Thanks to Captain Francois I now have the perfect place for my little garden to sprout….

Salad greens are not easy to keep fresh in such a humid environment

so sprouts just may be the best alternative

and the nutritional benefits are impressive.

This is my first time trying out the Easy Sprout onboard

and so far all those little seeds are doing what moist seeds are supposed to do.

Just 1/4 cup of dry seeds gives a full 4 cups of sprouts.

If you have been following my posts you may remember my Easter post for Green Eggs and Ham.

Well those deviled eggs were SO good I thought why try green egg salad,

since I have some boiled eggs and an avocado that is begging to be used…

GREEN EGG SALAD SANDWICHES

with BOAT SPROUTS

1 avocado

4 boiled eggs

2 green onions, chopped

1tbsp dijon

mayonnaise (enough to hold miixture together)

dried chilli flakes (we like a little spice)

sea salt & pepper to taste

Sprouts

Bread

Mash avocado with boiled eggs.
Stir in onions
Add enough mayonnaise to help hold mixture together
Season to taste.
Perfect picnic at anchor.
