PASTA FRITTERS with SRIRACHA MAYO
 
 
What a great way to use leftover pasta. A complete meal on its own or add a simple side salad.

Ingredients
  • 2 cups cooked angel hair pasta
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • ½ cup grated onion
  • 1 clove garlic, grated
  • ½ cup fresh parsley, chopped
  • 4 eggs
  • ¼-1/2 cup Panko
  • sea salt and pepper
  • cooking oil
  • 1-2 tbsp Sriracha sauce
  • ¼ cup mayonnaise
Instructions
  1. In a large bowl mix all your fritter ingredients from the list above (minus the oil, Sriracha and mayo)
  2. Heat the oil in your fry pan or grill sheet.
  3. Scoop portions of the fritter mixture into the hot pan (about ⅓-1/2 cup each scoop)
  4. Fry until browned and crispy on both sides.
  5. Mix together mayo and Sriracha as a spicy 'go with'.
