LAMB with ORZO, OLIVES and FETA

Ingredients
  • 1 lb ground lamb
  • (substitute ground chicken or turkey if lamb isn’t available)
  • 1 small onion, chopped (about ½ cup)
  • 3 cloves garlic, chopped
  • cooking oil
  • 1 tsp dried dill
  • ½ tsp ground cloves
  • pinch dried chilis
  • sea salt and pepper to taste
  • 2 cups canned diced tomatoes
  • ½ cup sliced black olives
  • 1 cup orzo
  • to garnish
  • ½ cup crumbled feta
  • sprinkling of dried dill
  • lemon slices
Instructions
  1. Cook orzo then drain and set aside.
  2. Sauté onion and garlic in a little cooking oil.
  3. Add ground lamb and continue to sauté until lamb is browned.
  4. Add seasonings and sauté for another minute or two.
  5. Add tomatoes and simmer until the whole dish becomes a bit saucy.
