EASY CHEESY FAUX-TATO CASSEROLE Author: Galley Kat Serves: 4 servings
  • 1 head cauliflower, separated into florets (1 package of frozen cauliflower works well too)
  • 2 garlic cloves, chopped
  • 1 cup chicken broth
  • 2 green onions, chopped
  • 8 slices crispy bacon, crumbled
  • 4 oz cream cheese
  • ¼ cup plain Greek yogurt
  • 1-1/2 cups grated aged cheddar, divided
  • ¼ cup fine bread crumbs or panko
  1. In saucepan, steam florets and garlic in the broth for about 10-15 minute until cauliflower is soft and mashable.
  2. Drain chicken broth and smash cauliflower and garlic with a fork. The broth can be reserved and added to soups if you wish
  3. Stir in onion, bacon, cream cheese, yogurt and 1 cup cheddar until combined.
  4. Spread mixture in an 8"x8" casserole or Omnia stove top pan
  5. Sprinkle ¼ cup of cheddar over top.
  6. Add a layer of half the crumbs.
  7. Finish with the rest of the cheese then crumbs.
  8. If using a conventional oven, bake at 350 for about 20 minutes until cheese has melted and a brown crust has formed on top.
  9. If using your Omnia stove top oven, heat base plate on high for 5 minutes.
  10. Add covered Omnia baking pan and continue cooking for another 5 minutes on high.
  11. Reduce heat to medium low and continue cooking for another 18-20 minutes until mixture is bubbly and slightly browned
