EASY CHEESY FAUX-TATO CASSEROLE
- 1 head cauliflower, separated into florets (1 package of frozen cauliflower works well too)
- 2 garlic cloves, chopped
- 1 cup chicken broth
- 2 green onions, chopped
- 8 slices crispy bacon, crumbled
- 4 oz cream cheese
- ¼ cup plain Greek yogurt
- 1-1/2 cups grated aged cheddar, divided
- ¼ cup fine bread crumbs or panko
- In saucepan, steam florets and garlic in the broth for about 10-15 minute until cauliflower is soft and mashable.
- Drain chicken broth and smash cauliflower and garlic with a fork. The broth can be reserved and added to soups if you wish
- Stir in onion, bacon, cream cheese, yogurt and 1 cup cheddar until combined.
- Spread mixture in an 8"x8" casserole or Omnia stove top pan
- Sprinkle ¼ cup of cheddar over top.
- Add a layer of half the crumbs.
- Finish with the rest of the cheese then crumbs.
- If using a conventional oven, bake at 350 for about 20 minutes until cheese has melted and a brown crust has formed on top.
- If using your Omnia stove top oven, heat base plate on high for 5 minutes.
- Add covered Omnia baking pan and continue cooking for another 5 minutes on high.
- Reduce heat to medium low and continue cooking for another 18-20 minutes until mixture is bubbly and slightly browned
