SLOW COOKER PIZZA - an experiment
Serves: 1-10" pizza
  • 1 recipe for pizza dough
  • 2 spicy Italian sausage links (gives you about 1 cup cooked meat)
  • 1 onion, sliced
  • 1 tbsp butter
  • 1 garlic cloves, minced
  • 2 cup of your favourite pizza cheese (I used a combination of parmesan, gruyere and mozzarella)
  • Seasonings of choice (I used dried chilis, thyme, ground pepper and oregano)
  • Olive oil for cooking and for drizzling
  • Corn meal (2-3 tbsp)
  1. Sprinkle corn meal lightly in bottom of slow cooker pot.
  2. Roll out dough about 2" larger than cooking pot bottom
  3. Place dough in pot, sprinkle lightly with more corn meal and press dough up the sides, about 2".
  4. Add minced garlic to about 1 tbsp olive oil and brush on the dough generously.
  5. Sprinkle half of the cheese over the dough.
  6. In sauté pan cook onion in butter until nicely caramelized.
  7. Remove sausage from casings and brown in same pan as onions, breaking up the meat with a wooden spoon as it browns.
  8. Spoon the onion sausage mixture over the layer of cheese.
  9. Sprinkle with seasonings of choice
  10. Top with remaining cheese.
  11. Drape a tea towel over the cooker and place lid over towel.
  12. Set cooker on high for 4 hours.
  13. Lift the pizza from cooker with a spatula, drizzle with olive oil, slice and serve.
