CRAB ROLLS with AVOCADO MAYO

Serves: 6 rolls
Ingredients
  • 1 avocado
  • ⅓ cup mayonnaise
  • 1 tbsp white balsamic vinegar
  • ½ tsp lemon zest
  • 2 cups crab meat
  • 2 green onions, chopped
  • ½ cup chopped red pepper
  • 6 hot dog buns (top split preferrable)
  • 2 tbsp softened butter
  • 2 cups salad greens
  • Old Bay
Instructions
  1. Mash ½ avocado and mix well with mayo, balsamic vinegar and lemon zest.
  2. Chop other ½ avocado and fold into mayo mixture with crab, onions and pepper.
  3. Butter buns.
  4. Pile buns with greens then top with crab mixture.
  5. Sprinkle with Old Bay
