TOMATO SOUP

Ingredients
  • 1tbsp each olive oil & butter
  • 3 small onions, chopped
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • 1-28oz tin crushed tomatoes
  • 3 cups chicken or vegetable stock
  • fresh herbs (I used thyme & basil)
  • salt & pepper
Instructions
  1. Sauté onions and garlic until transparent & fragrant.
  2. Add flour and stir until slightly thickened and flour is 'cooked'.
  3. Add herbs, salt & pepper and tomatoes mixing well with flour, onions and garlic.
  4. Gradually add stock and simmer for 20 minutes.
  5. If you have a blender or processor onboard
  6. puree in batches until creamy
