TOMATO SOUP
- 1tbsp each olive oil & butter
- 3 small onions, chopped
- 2 garlic cloves, minced
- 2 tbsp flour
- 1-28oz tin crushed tomatoes
- 3 cups chicken or vegetable stock
- fresh herbs (I used thyme & basil)
- salt & pepper
- Sauté onions and garlic until transparent & fragrant.
- Add flour and stir until slightly thickened and flour is 'cooked'.
- Add herbs, salt & pepper and tomatoes mixing well with flour, onions and garlic.
- Gradually add stock and simmer for 20 minutes.
- If you have a blender or processor onboard
- puree in batches until creamy
