FRENCH ONION MUSHROOM GRILLED CHEESE SANDWICH
- 2 lbs onions, peeled, halved and thinly sliced
- 6 tbsp olive oil, divided
- 3 tbsp butter
- ½ tsp salt
- ½ tsp sugar
- ½ lb white mushrooms, sliced
- 1 tsp dried thyme
- 2 cups shredded smoked Gouda
- 4 slices bread
- 1 tbsp mayonnaise
- First for the onions, heat 3 tbsp of oil and butter in a heavy pan, cast iron seems to work best
- Add all of the onions, stirring to coat well with butter and oil
- Sprinkle with salt and sugar
- Continue to cook over medium high heat, stirring occasionally until the onions begin to brown and caramelize.
- This should take about 20-25 minutes.
- Remove onions from pan and set aside.
- Add the remaining 3 tbsp oil to your onion pan and heat until it begins to smoke.
- Add the mushrooms stirring to coat well with oil.
- Add thyme.
- Continue to sauté over medium high heat until mushrooms begin to brown.
- Return onions to your pan and stir to combine with mushrooms
- Time to make sandwiches
- Heat grill pan.
- Paint one side of each bread slice with mayonnaise.
- These will be the outsides of your grilled sandwich.
- Divide half the cheese evenly over two slices of bread, the non-mayo sides.
- Pile generous helpings of the onion mushroom mixture on the cheese.
- Top with the rest of the cheese.
- Add the two remaining slices of bread on each, mayo side out
- Place carefully onto your heated pan and grill until golden.
- Flip and repeat.
