• 1 mini cucumber, thinly sliced in ribbons
  • 2 tbsp lime juice, divided
  • sea salt and pepper
  • 1 ripe avocado
  • 2 bulbs of roasted garlic (my boat how-to here)
  • 1 healthy pinch of crushed chilis
  • 12 grape tomatoes, halved
  • 2-3 tbsp olive oil for drizzling and toasting
  • 1 6" ciabatta, halved vertically and horizontally to give 4 pieces or bread of your choice
  1. Toss cucumber ribbons in 1 tbsp lime juice.
  2. Season with salt and pepper and set aside.
  3. Squeeze garlic from bulbs and mash with the avocado.
  4. Stir in remaining lime juice and season with salt, pepper and crush chilis.
  5. Toast each of the four pieces of ciabatta.
  6. My favourite method on the boat is to brush well with olive oil and toast on a hot grill pan until nicely browned.
  7. Divide avocado mixture amongst each toast.
  8. Top with tomato and cucumber ribbons.
  9. Drizzle with a bit of olive oil and serve.
