PRESSURE COOKER UNSTUFFED CABBAGE ROLLS

Ingredients
  • ½-3/4 lb ground chicken
  • 1 egg
  • ½ cup panko
  • seasoning of choice
  • (I used dried thyme,oregano, salt, and pepper)
  • 1 small cabbage, cored and roughly chopped
  • (about 4 cups)
  • 2 green onions, chopped
  • 1-18 oz can of plum tomatoes in sauce, break up with a fork into small pieces
  • dash of worchestershire sauce
  • 2 tbsp tomato paste
  • ½ cup rice
  • splash or two of red wine
  • Plain Greek yogurt or sour cream
Instructions
  1. Combine chicken, egg, panko & seasoning and form into little meatballs
  2. Set pressure cooker to brown and start cooking meatballs in batches.
  3. Add the rest of the ingredients (except yogurt) and gently stir to combine.
  4. Place cooker lid and set timer to 20 minutes.
  5. When done, let pressure dissipate.
  6. Scoop the steaming yumminess into bowls and top with a scoop of Greek yogurt
