ROASTED CRANBERRY CHAMPAGNE COCKTAIL MIXER

I suppose for most of you the holiday party season is in full swing.
In my land galley, we have been busy planning and preparing to receive
Captain’s family en masse.
Our current count 35.
It has been really hard for me to break away from tiny galley,
tiny living habits, even though for the next few months
I have actual counter top space,
a real refrigerator and freezer,
and hot and cold running water
making preparing meals so easy.
In spite of this, preparing for a crowd is still a challenge.
How much can I make ahead,
where will I put it when I do and maybe the biggest hurdle,
all stores will be closed the day before the big event (26th December),
so will I be able to provision needed fresh ingredients?
Being the highly distractible person that I am,
instead of proceeding in a logical fashion,
I put myself back in ‘boat mode’
making some consumable gifts.
I’m thinking that a couple of these stashed onboard next season
would be welcomed when invited for docktails.
Not just for cocktails…
I’ve become so conscious of dual purposing everything
in our small living environment.
Try the syrup over French Vanilla Ice Cream..YUM!
ROASTED CRANBERRY CHAMPAGNE COCKTAIL MIXER
makes 1 cup of syrup
what you will need
1 cup cranberries
1 tsp ground cloves
1 cup white sugar
1 cup water
if gifting, a decorative bottle and gift tag
1 bottle of Champagne or other sparkling wine.
Several frozen cranberries
pulling it all together
I tried this two ways: oven roasting and pan roasting the cranberries,
because once back on the water there will be no oven for this Kat.
I found no discernible difference between the two methods.
Toss washed cranberries in ground cloves.
For oven roasting place in a preheated 425 ° oven for 10 minutes.
For pan roasting swirl coated berries in a dry non-stick pan
until they start to pop, about 10 minutes.
Oh, the aroma!
In a small saucepan place sugar in the water and heat until melted.
Place roasted cranberries in the solution, cover
and steep for at least 1 hour, the longer the better.
Strain and pour into decorative bottle.
On your gift tag write the recipe for Cranberry Champagne Cocktail
Add 1-1/2 ounces of syrup to champagne glass.
Pour in your fave bubbly.
Drop in a few frozen cranberries.
