GRILLED STRAWBERRY BRUSCHETTA & COSMOPOLITAN HEARTS
We have been invited to a Valentine dinner party
and the hostess is very conscious of coordinating colours
for pleasing presentation appeal.
Obviously something in a red palate…
Pressure is on…
GRILLED STRAWBERRY BRUSCHETTA
4 cups of sliced fresh strawberries
1/8 cup balsamic vinegar
1 baguette, sliced
A few basil leaves
Gently mix strawberries & balsamic vinegar.
Spread onto a grill sheet, cover grill and cook for 5-7 minutes.
Remove and let cool
Brush baguette slices with olive oil and grill till toasted and golden.
Spread some goat cheese on each slice.
Top with a spoonfull of the strawberries.
Sprinkle top with chiffonade of fresh basil.
If you don’t want to bother with the grilled baguette,
this is also really good on Pepper Triscuits.
1 1/4 cup cranberry juice cocktail
2 1/2 envelopes plain gelatin
1/4 cup fresh lime juice
1/4 cup Grand Marnier (Triple Sec or Cointreau)
3/4 cup vodka
1/4 cup lime zest for garnish
Pour cranberry and lime juice into a small saucepan and sprinkle with gelatin.
Allow to soak for a few minutes.
Heat on low, stirring constantly, until gelatin is fully dissolved.
Stir in the liquors, making sure to fully incorporate.
Pour into pan or molds, and chill until set, several hours or overnight.
To serve, cut into desired shapes and garnish with lime zest.
