TASTY TOAST with SWEET CITRUS BUTTER

Would you like a simple no-fuss breakfast this morning?
…just boil an egg of two to serve with and maybe some fresh fruit.
I halved the original recipe thinking that would be enough.
We couldn’t stop eating it!
a little more toast to go with a little more butter to go with a little more toast…
and on and on….
TASTY TOAST with SWEET CITRUS BUTTER
1/2 stick unsalted butter, at room temperature
1 tbsp honey, or to taste
**1/2 tbsp fresh citrus juice
**1/2 tsp finely grated citrus zest
**course salt to taste

Slices of panettone or freshly bake boat bread, toasted
Beat butter until smooth
Stir in honey, juice and zest.
Store tightly covered in refrigerator in a glass container for up to 3 days.
To serve, return to room, stir well and sprinkle with a touch of salt.

I had a very small bit of preserved lemon left so chopped up enough for 1 tbsp,
used some of the salty juice and omitted adding extra salt.
I now have sample the recipe both ways
and the preserved lemon addition will from now on be my go to method.
(to my original preserved lemons,
I now top up the jar with a good quality olive oil.
A spoonful of the salty lemony oil works so well in so many things)
