Considering all of the apparent health benefits of chia seeds,
and the relative ease and success of my chocolate chia pudding (link),
I decided to translate these little miracles into a spicy jam.
…just a few simple ingredients…
…takes less time and effort than traditional jam…
…and we get the added health benefits…
We aren’t big jam eaters
but a touch of this spicy ‘confiture’ with a little bit of cheese on a little bit of bread…
CHIA STRAWBERRY JAM
yields 1 cup
2 cups strawberries, chopped
2 tbsp maple syrup
1 tbsp white chia seeds
1 Serrano chili, minced
1 tbsp lemon juice
Simmer strawberries and maple syrup for 5 minutes.
Add chia, lemon juice and peppers and continue to simmer for 5 minutes more.
As the mixture cools it will become more ‘jammy’ in texture.
I make no claims for the correct canning methods so the rest is up to you.
I poured boiling water over the little canning jars to ‘sterilize’
then filled with the jam and secured the lids.
…all ready for a boat picnic…
