The end of our thirty day Whole30 quest is not the end of our Whole30 quest.
Each eliminated food group has to be re-introduced one by one.
At the time of this road trip we have added non-grain alcohol/wine
back into the mix….obviously not to be included in our road trip menu.
We did however toast our success on Day 30 +1 with a very fine potato vodka….just a splash…not shaken…not stirred.
We are allowed lentils though.
What can I do with lentils to make them road-trip worthy?
Crackers!…mush up some lentils and make crackers!
This is, after all the Internatonal Year of the Pulse. We should all be eating more of these healthy litle bits of goodness.
As we have no conventional oven onboard R.E.D.
and since this is supposed to be a blog about easy boat galley recipes, this is a departure from the norm.
They were really easy to make in my land oven, worth the effort and definitely a share-worthy recipe.
what you will need
2 cups cooked lentils (I made mine in a pressure cooker with a dash of salt and a bay leaf for 45 minutes)
1/2 small onion, chopped (about 1/2 cup)
1 garlic clove, sliced
1/4 cup olive oil
dash of dried chilis
salt and pepper to taste (see *Galley Kat Note below)
putting it all together
Place all but the olive oil in a food processor and take them for a spin until the mixture reaches a smooth consistency.
Add the olive oil gradually while continuing to process.
The result should be a smooth thick paste.
Pre-heat your oven to 350 °
Line a baking sheet with parchment paper
Spread your lentil paste as evenly and as thinly as possible over the entire surface.
With a knife or pizza cutter, score the paste in a cracker-sized pattern.
Be creative. Mine was a haphazard herringbone pattern.
Bake for 15-20 minutes.
Turn and bake for another 15-20 minutes.
I placed another parchment lined baking pan over the top and then flipped it over.
If your crackers aren’t quite crispy enough, continue to cook,
checking every 5 minutes or so.
I turned off the oven and let them sit in the heat for another 30 minutes.
The result is very much like RyVita Crackers, a neutral plane for adding some tasty dips or soft cheese.

You can also be creative with the add-ins. Try with dried oregano or thyme or maybe herbes de Provence. Chopped dried cranberries or cherries. Sesame, sunflower, or pumpkin seeds. Finely chopped nuts.
