DIETARY REBOOT – Days 7 and 8

“Like Sex With Your Pants On”… tee hee!
That’s going to raise a few eyebrows.
This is where Whole 30 and I may not entirely agree.
I understand the concept and if you would like to read about their
very amusing analogy you can find the article here.
It’s when it comes to making crêpes or pancakes
that I disagree, somewhat.
Thing is, sometimes we actually do enjoy no-flour pancakes.
I mean really enjoy.
And not because we are avoiding flour.
Sometimes on our little boat I’m fresh out of flour
and all I have for morning crêpes is a banana and eggs.
It’s a very smart, very healthy
and totally delicious alternative.
Pants on or not, today for breakfast
we are having Whole 30 compliant but not entirely sanctioned
Two-Ingredient Pancakes
I left out the baking powder
which gives a slightly lighter result.
Serve with homemade blueberry sauce (recipe follows)
Blueberry Sauce
what you will need
2 cups blueberries
1/4 cup water or fruit juice for a sweeter result
(I used the water I had added to our fresh pineapple)
2 tsp arrowroot powder
1 tbsp water
time to cook
Simmer blueberries and juice for about 5 minutes.
In a small bowl whisk together arrow root and water.
Remove blueberries from the stove
and stir in arrowroot mixture.
Continuing to cook after adding the arrowroot will destroy its thickening properties
So easy!
…and no sugar added.
The sauce will thicken as it cools.

I was surprised that we didn’t even miss the usual
accompanying bread.
Supper was designated as
