QUINOA SALAD with GRILLED HALLOUMI

QUINOA SALAD with GRILLED HALLOUMI

My latest food crush – halloumi. It’s this wonderful salty squeaky Cypriot cheese. It has a high melting point which lends itself well to grilling. Here is a wonderfully fresh and tasty salad, perfect for a simple evening meal. QUINOA SALAD with GRILLED HALLOUMI 1 tbsp red wine vinegar 1 large garlic clove, shredded 1 tsp sugar 1 tsp dried chili flakes 4 tbsp olive oil healthy dash of sea salt & pepper 4 small Persian cucumbers, quartered and chopped…

NECTARINE CAPRESSE SALAD

NECTARINE CAPRESSE SALAD

This is such a simple, versatile and pretty salad.   Peaches or other firm stone fruit like peaches or plums can be swapped out for the nectarines. Mint can be exchanged for the basil. The balsamic vinegar reduction can be done in advance in quantity and used for adding flavour to a number of dishes or dressing up a salad. I made some for last year’s boating season and brought it onboard in a small squeeze bottle I had purchaced…

MARINATED KALE & BULGAR SALAD
