EASY CHEESY CHICKEN ENCHILADAS

EASY CHEESY CHICKEN ENCHILADAS

I wasn’t going to write a blog post about this recipe until Captain  gave his review (unbiased of course).  It was love at first bite. Sometimes going to that extra effort is worth it to hear the ‘mmmm’s’ and ‘oh-this-is-SO-good’s’  Not that in a traditional galley or land kitchen it would be difficult to put together (basically a cheesed up spiced up white sauce with a chicken filling) but there was the saucepan and the extra bowl to mix the…

STOVE-TOP QUINOA STUFFED PEPPERS

STOVE-TOP QUINOA STUFFED PEPPERS

Here’s another of my little stove top vegetarian dishes for your next Meatless Monday.  You could add some ground chicken or spice it up with some well seasoned sausage but the quinoa and added cheese pack a pretty good protein punch without it. I made them with a Mexican flare, adding jalapenos, corn and black beans to the mix. As there was no animal protein to cook they were ready in about 25 stove-top-minutes,  although if you decide to add…

CHEESY SPINACH STUFFED MUSHROOMS

CHEESY SPINACH STUFFED MUSHROOMS

Want an easy side dish for your supper tonight? These stuffed mushrooms were super simple to throw together and very tasty . I can even see them made with smaller mushrooms served as an appetizer.   I made six for the two of us but the filling could easily have been enough for eight mushrooms.  I really over filled them.     I spiced up the filling with some dried chilis but other seasoning could have been added.  Try tarragon,…

STOVE TOP BREAKFAST CUSTARDS

STOVE TOP BREAKFAST CUSTARDS

This little breakfast treat was surprisingly easy.  I stumbled onto the idea while reading an article about the sous vide method of cooking and wondered why I couldn’t recreate these in my stove top Omnia oven.  The water bath method takes one hour of cooking time and since cooking fuel/electricity is at a premium on the boat I thought that surely I can cut that time in half.   I laid all my ingredients out on the counter, whipped up…

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

He’s on a roll.  Second Captain Cooks in less than a week (his last creation here).  This time he made us an incredibly delicious fish dish in my daughter’s kitchen as we are currently homeless and at the time we hadn’t yet found a home for our boat. It is super easy to prepare.  Just season the fish well… Prepare the sauce and let it spend a few minutes  in the oven. Now that we are back on the water,…

CHEESY POTATO PUFFS

CHEESY POTATO PUFFS

With just one burner to cook our meals onboard I really have to pick and choose what will take centre stage in the galley.  It’s why I’m usually careful about leftovers and how those leftovers can be reborn for another time.  Tonight was one of those times for two cups of leftover mashed potatoes from our yummy Apple Sauce Meatloaf supper  to monopolize the space (recipe for meatloaf here). Depending on the size of muffin cups this recipe should give…

APPLESAUCE MEATLOAF

APPLESAUCE MEATLOAF

Ah, the versatility of the lowly meatloaf! So many ways to dress it up.  So many different ways to season.   It shows up quite often in my galley, providing variety, using different types of meats and oh, those leftovers.  The one pictured below gave up the basics with slices of bacon-wrapped deliciousness, followed by meatloaf sandwiches the next day and a bonus day of meatloaf and potato soup. Recipe here The next one, up to now, has been Captain’s…

BAKED GREEK SHRIMP with TOMATOES and FETA

BAKED GREEK SHRIMP with TOMATOES and FETA

Now that the weather is improving…slowly…but any improvement is welcomed… I’m beginning to make plans for summer boat life.  This means easy quick meals, prepared with simple fresh ingredients. Tonight’s meal was one of those winners…so much so that although I made enough for two servings we both wished we could have gone back for seconds. Onions and lots of garlic sent wafts of intoxicating aromas through my land galley.  Fresh tomatoes and lots of parsley topped off the base…

PORTUGUESE COD, POTATO and EGG CASSEROLE

PORTUGUESE COD, POTATO and EGG CASSEROLE

We do love our fish.  Haven’t had a lot of luck catching the critters during our summers on the boat but we do dream someday of improving on this skill.  When we are lucky enough to get hold of fresh fish it’s a feast aboard.  With a little pretending tonight I created this Portuguese dish with some fresh cod found at our local fish market. Starting with some sautéed  onions and garlic, the rest was easy. Sliced mini potatoes and…

EASY CHEESY FAUX-TATO CASSEROLE

EASY CHEESY FAUX-TATO CASSEROLE

Today’s post is all about the cauliflower. So many things can be made with this unassuming vegetable. I think it’s OK to call a vegetable unassuming. One of my favourites is to use it to make a faux alfredo sauce which I mix in with my Three Cheese Hash Brown Casserole (recipe here) And for a low carb alternative to a summery barbecue picnic type dish try using cauliflower in a salad instead of potatoes. (recipe here) Fresh cauliflower is…
