ROASTED CORN CHEESE DIP

ROASTED CORN CHEESE DIP

I so do miss our happy hours.  It seems that lately one day melts into the next and half the time the only sure reference of date we have is what month it is….as the conversation goes: what day is it?  I don’t know but I think it’s still September.  Our big move is coming up soon (a reference to our craziness on my other blog here if you are interested) so most days are consumed with making lists and…

FRESH DIGBY SCALLOP and GRILLED CORN CEVICHE

FRESH DIGBY SCALLOP and GRILLED CORN CEVICHE

Fresh is the name of the game here in the galley today.  Our local market just got in some fresh (never before frozen, or soaked in sodium tripolyphosphate) Digby scallops all plump and juicy.  Some green tomatoes and farm fresh corn on the cob came together to produce our supper tonight. I was feeling a little oink-ish and bought a whole pound of the little sea jewels planning on serving them as a main course although you could easily get…

GRILLED BACON-WRAPPED PORK TENDERLOIN BITES

GRILLED BACON-WRAPPED PORK TENDERLOIN BITES

Missing my land-based Friday happy hours. The one day of the week that was a no-cook zone.  I could prepare things in advance but the whole idea was to create a no fuss, easy on the Galley Kat end of the week kind of dinner when we both got home from work.  Sometimes I would get a little carried away (who me?) with new recipes to try but it was that one sacred day…no not Sunday….sacred in the sense that…

ZUCCHINI CHICKEN BITES

ZUCCHINI CHICKEN BITES

With all that’s been going on (condo selling and spring boat stuff) we probably haven’t been eating as well as we should.  Stopping to pick up some fast food breakfast in the morning so we don’t mess up the kitchen for home showings and frozen pizza for supper (no excuse there., just didn’t feel like cooking).  Could be partly the reason for all the colds/flu/pneumonia/bronchitis, three rounds of antibiotics and trips to the doctor the past five months. And for…

SHRIMP IN BUTTERY BEER SAUCE

SHRIMP IN BUTTERY BEER SAUCE

I made these delicious little morsels for a recent cocktail-with-friends evening.  SO GOOD!…and so easy! I was so caught up in the preparations that I totally forgot to take more pictures.  Maybe one was all I needed.  Look at those succulent pink creatures bubbling in that tasty beer butter sauce.  I made them in advance then gently heated just prior to serving to take the chill off a bit.  Grab some cocktail forks or tooth picks and pass them with…

EASY CHEESY ARTICHOKE DIP

EASY CHEESY ARTICHOKE DIP

What to do with all that leftover holiday cheese?  Make a dip!  Add some greens, seasonings and a can of artichokes and voilà, dinner is served.  Anyway for us tonight it’s dinner with all the main components: protein, veggies with a side of bread and crackers. It made the perfect I-don’t-really-feel-like-cooking lap picnic. When we are onboard with no oven this dip can be ‘cooked’ a couple of ways.  Either place the heat-proof dish in the barbecue set on low or…

SHRIMP GUACAMOLE CANAPÉS

SHRIMP GUACAMOLE CANAPÉS

This is the second of two new recipes I wanted to try out for an upcoming cocktail party.  I was really encouraged with the first one – little Croque Monsieur bites. It was so good I ended up making full-sized Croque Monsieur that night for dinner. Smoked Salmon Croque Monsieur recipe here This next one, too, received rave reviews from my official but not-entirely-unbiased taste tester.  It’s very easy to make…little toasted or roasted sweet potato rounds, some smashed garlicy…

SMOKED SALMON CROQUE MONSIEUR

SMOKED SALMON CROQUE MONSIEUR

“OH MON DIEU!”…translated….”of all things holy, this was one amazingly delicious sandwich”…and one worthy of bumping all my scheduled posts to have it published today. I am in the midst of preparing a menu for an upcoming cocktail gathering.  Just a simple casual affair to bring together  a small group of friends for some bubbly, a few nibbles and lots of good cheer. Usually I go a little overboard…emphasis less on the ‘little’ and more on the  ‘overboard’.  I have…

THAI SHRIMP with MANGO COCONUT SAUCE

This is a happy Happy Hour in the making.  Holiday season inspired and super easy to prepare…and I can now guarantee they are taste-tester approved. It’s fun presenting these as little individual servings….mango sauce served up in shot glassses or little port glasses. Let your guests grab a few extra shrimp on individual plates. So good!  So easy!  I’m now wishing I had made more. THAI SHRIMP with MANGO COCONUT SAUCE   Print Author: Galley Kat Ingredients 1 lb cooked large…

ASIAN-INSPIRED MEATBALLS with CUCUMBER SALAD

ASIAN-INSPIRED MEATBALLS with CUCUMBER SALAD

‘Tis the season filled with shopping, facing crowds, traffic. The season filled with over-scheduling.  The season filled with stress for some.  Well, if I can offer you just one super easy and super delicious recipe to serve to your guests, one that can be prepared a little in advance then I am one very happy Galley Kat. This post is actually two recipes in one because sometimes Happy Hour is all that’s necessary if you offer all or most of…
