SWEET POTATO PATTIES with CURRIED YOGURT SAUCE

We love our sweet taters.
So rich in fibre!
…and this recipe with the added yogurt sauce is perfect
adding great flavour and apparently the addition of a little fat
will aid in the uptake of all that good orange beta-carotene.
They also make an easy appetizer or snack.
Just make little two inch crispy potato medallions
with a touch of sauce on the side.
SWEET POTATO PATTIES
1 large sweet potato, peeled and grated
1/2 tsp sea salt
1 egg
1-1/2 tbsp maple syrup
1/2 tsp curry
1/2 tsp ground pepper
pinch of cinnamon
2 green onions, chopped
1/3 cup panko
Grate potatoes into a large bowl and sprinkle with salt
Set aside for 5 minutes.
Whisk eggs and seasonings together in a small bowl.
Squeeze out as much water from potatoes.
Mix all together.
Heat oiled grill and divide mixture into six patties.
Cook until well browned on both sides.
CURRIED YOGURT SAUCE
1/2 cup plain Greek yogurt
1/2 tsp curry powder
1/4 tsp sea salt
1/4 tsp ground pepper
Mix all ingredients together.
Serve potato patties with a dollop of sauce.
