LAMB PATTIES with MINTED YOGURT SAUCE

I first tried these as kabobs but they didn’t hold together very well..
possibly because of the goat cheese,
so this time I made the same recipe but as patties or burgers
and grilled them on the barbecue…
much better…
The rich taste of the lamb, the sweetness of the rasins and the spicy sauce
were a winning combination…
 
shown here served with my Broad Bean & Pea Salad
 
 
 
LAMB PATTIES
1 lb ground lamb
1/4 cup goat cheese
2 tbsp mayonnaise
1/2 cup raisins
1/2 mince red onion
2 tbsp chopped parsley or cilantro
3/4 tsp cayenne
1/4 tsp cumin
1/4 tsp ground coriander
a good grind of pepper and sea salt
 
Mixed all together and form into patties
(I found it easier to mix all but lamb thoroughly then fold into the meat)
Grill until nicely browned on each side and until juices run clear
 

 

 

 

 
 
MINTED YOGURT SAUCE
1 cup plain Greek Yogurt
1 lime juiced
3 cloves garlic
1 cup fresh mint
salt, cayenne, ground cumin, paprika to taste
Place all in a bowl and using your blender of choice
process until smooth and creamy.
Serve with Lamb Patties
