Looking ahead optimistically to boating season
when these two winter-worn ‘dirt people’
will once again be on the water,
I prepared a really tastey grilled dinner…
Good for ‘Meatless Monday’ and this version, gluten free…
BLACK BEAN & CORN BURGERS
1/2 cup chopped onion
1 large garlic clove, minced
1 jalapeño chopped (seeds removed for less heat)
1 can black beans (about 2 cups)
1 small can corn niblets (about 3/4 cups)
1 tsp Cayenne pepper
1.5 tsp Ground cumin
1 tsp Dried chili flakes
Sea salt & pepper to taste
3/4 cups gluten free bread crumbs or ground oatmeal
Sauté onion, garlic and jalapeño in a couple of swirls of oil until transparent and fragrant.
Add 1.5 cups of black beans, and seasoning and cook until warmed.
Mash or process the mixture until most of the beans are a soft paste.
Add remaining beans and corn.
Taste test and add more seasoning as required, the beans can be bland.
Stir in bread crumbs and mix until you can form patties.
If the mixture is too muchy add more crumbs.
Form into 4 – 6 patties
Grill until browned and crusty, flip and repeat on second side.
Serve on grilled buns with lettuce, red onion, and a slice of avocado & tomato.
I served these with Grilled Chili Lime Corn
Half or quarter 4-6 cobs of corn
Melt 2-3 tbsp butter
Stir in 1 tbsp chilli powder & 1/4 cup lime juice
Place mixture in plastic baggy with corn and toss until well coated
Grill for 3-4 minutes per side until corn begins to brown slightly,
brushing with chili lime mixture as needed.
I can almost taste, smell and feel the beginning of boating season….
