SPICY SALMON BREAKFAST MUFFINS

Handheld breakfasts are a real bonus for busy folks. Especially important for she who mans the galley but would rather be out sailing. Healthy, make ahead, this next recipe is perfect for a tasty on-the-go meal.
I make them in the evening, clean up all the cooking mess, stash them away in the refrigerator so all we have to think about in the morning is making that first cup of coffee before heading out.

Road Trip Feast
SPICY SALMON BREAKFAST MUFFINS
what you will need
1 tin of salmon, drained
1/4 cup minced green onion
1/3 cup chopped fresh parlsey
1 cup mashed potatoes (I’ve used both sweet and regular white potatoes and both were very nice)
1 tbsp minced jalapenos peppers
1 tsp dried dill
1/2 tsp dried chilis
1 tbsp grated lemon rind
grind or two of salt and pepper
3 eggs, lightly beaten
putting it all together
In a mixing bowl combine all the ingredients.
Heat oven to 350 ° or if using stove top Omnia heat the base plate
Spoon salmon mixture into prepared muffin tins.
Bake in conventional oven for 20-25 minutes,
same amount of time for stove top method,
or until a knife inserted in the centre comes out cleanly.
