SMASHED PEAS and WHITE BEANS on TOAST

I’m not a big bread eater like my Frenchman,

so when I come across another great looking recipe

for an open-faced sandwich (half the bread) I have to try it.

My recent post of Avocado Toast with Sardines and Pickled Ginger

was a big hit here is our little galley

and this next Jamie Oliver-inpsired recipe has turned out to be just as good…

The winning combination of peas, mint and lemon,

with the added benefit of protein, iron and fibre of the white beans

makes this an excellent choice for a healthy meal anytime.

SMASHED PEAS and WHITE BEANS on TOAST

4-6 servings

1/2 cup fresh peas (or frozen if fresh aren’t available)

1 cup white beans, drained and rinsed

1/4 cup fresh mint leaves

juice of 1 lemon (save some zest for garnishing)

1/4 cup grated pecorino

a good quality EVOO

sea salt and pepper

several slices of crusty bread (my boat bread works very well for this)

1 large garlic clove, peeled and cut in half lengthwise.

fresh buffalo mozzarella

pea shoots to garnish

In a bowl start by muddling the peas with the mint leaves to form a paste.

Add the white beans and continue to grind and smash away.

You could process these in a blender

but as Jamie Oliver put so well in the original recipe:

you would lose ‘the lovely bashed and bruised flavour that makes this dish incredible’.

Stir in the lemon juice.

Add a tablespoon or two of EVOO and mix to form a spreadable consistency.

Stir in pecorino.

Salt and pepper to taste.

Toast the bread on both sides on the barbecue or grill pan.

Swipe the garlic half across each piece.

Top with pea mixture.

Garnish with torn bits of mozzarella and pea shoots.

Sprinkle with a bit of lemon rind, extra pepper and salt.

Finally, drizzle with a bit more EVOO and enjoy!
