CRÊPES de la CHANDELEUR with LEMON SAUCE
I planned on posting this for Groundhog Day (Candlemas)
but so many other things got in the way.
This early morning’s sunrise inspired me to create it today…
Better late than never, I say, when it comes to a tasty easy breakfast dish.
2 cups sugar
3/4 cups fresh lemon juice
zest from 1 lemon
1 tbsp butter
Place all in a small saucepan
Bring to boil stirring to dissolve sugar.
Simmer for a couple minutes until sauce thickens a bit.
Stir in 1 tbsp butter to incorporate.
This will keep for several weeks in the refrigerator.
…other possible uses might include a splash in your morning or evening tea,
…added to your favourite Margherita or Mojito
…infused with rosemary, mint or basil…
Today it’s being served over Crêpes…
2 cups Bisquick clone mix
1-1/2 cups milk
Whisk milk & egg together
Stir in Bisquick clone mix and stir until well incorporated.
The mix should be ‘thin’.
If not add a few more splashes of milk.
Cook on BBQ grill pan as you would pancakes.
Serve with bacon and grilled lemon slices
Topped with lemon sauce.
