CHAI SPICE FRENCH TOAST with RUM CARAMEL BANANA PECAN SAUCE

Galley Kat is into the sauce again…
…but first let me throw together some spice….
CHAI SPICE
1 tsp ground cardamon
1 tsp ground ginger
2 tsp ground cinnamon
1/2 ground cloves
1/4 ground all spice
Mix all together and store in an air tight container
OK…now let’s get saucy…
RUM CARAMEL SAUCE with BANANAS & PECANS
2 tbsp butter
1/2 cup brown sugar
1 tsp chai spice
2 oz dark rum
1/3 cup pecans
2 bananas, slice diagonally
Melt butter in heavy pan.
When bubbly add in brown sugar and spice,
stirring until melt and it starts to caramellize and thicken.
Add rum (be careful as it will bubble up)
When ready to serve add pecans and bananas,
Stirring to coat well with the sauce.
Captain makes fun of me when I put foil around the banana ends.
I think it makes the bananas last longer
He asks if it’s to keep out alien signals.
Putting it all together…
CHAI SPICE FRENCH TOAST
2-3 eggs
1/4 cup milk
1 tsp chai spice
several slices of bread
(I used some of my Bread-in-a-Bag)
bacon

 

Whip up eggs with milk
and chai spice
Soak the bread in the mixture while bacon is grilling
When the bread is all soaky and soft,
place the slices on the grill pan,
flipping as they brown.
I usually turn down the grill to minimum
once the bread is browned nicely on both sides
and cook for another couple of minutes
to make sure the internal egg is cooked.
