BAKED EGGS with GRUYERE and MUSHROOMS
 
BAKED EGGS with GRUYERE and MUSHROOMS
 
 
1 tbsp butter
1/2 cup mushroom, any variety, sliced
1 garlic clove minced
1/2 tsp thyme
Salt (sea) & pepper
4 large eggs
1/2 cup Gruyere cheese, shredded
* 2-3 tbsp heavy cream
Melt butter in small sauté pan
When butter is foaming add mushrooms,
Sprinkle with salt and pepper and thyme, cooking until slightly browned and tender
Add garlic in last few minutes
** Place Omnia base on burner set on high
While base is heating spread mushroom mixture in bottom of a well greased Omina pan
Crack eggs over top
Sprinkle with cheese
Drizzle cream over mixture
Set on top of base and reduce heat to low
Cook for 8-10 minutes until egg whites are set
and yolks are just barely runny.
Watch carefully to make sure the eggs don’t over-cook

Galley Kat Notes
*I thought I would try out canned cream
as for onboard occasions I would unlikely have fresh.
I am not a huge fan of additives but it worked well.
Now willl have to think of something yummy to use the rest of the cream.
**Onboard R.E.D. we are oven-less
so this dish was made using my stove-top Omnia Oven.
For a more conventional method bake at 400 ° for 10-12 minutes.
