ARETHA FRANKENSTEIN’S WAFFLES OF INSANE GREATNESS
I couldn’t come up with a better post title than this one.
and on International Waffle Day at that!
The origin of the recipe is Aretha’s
in Chattanooga, Tennessee.
and inspired by Food 52
ARETHA FRANKENSTEIN’S
WAFFLES OF INSANE GREATNESS
3/4 cups all-purpose flour
1/4 cup corn starch
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup melted butter
1 egg
1 cup buttermilk
1-1/2 tsp sugar
3/4 tsp vanilla
In a large bowl mix together all the dry ingredients.
In a small bowl whisk egg then stir in milk, butter, sugar and vanilla.
Combine egg mixture with dry ingredients and set aside for 30 minutes.
Pour a small amount of batter over heated waffle iron (about 1/4 cup each side)
Cook until nicely browned on both sides.
I used our little stove-top camping/boat waffle iron for these.
It worked really well!
Serve immediately with butter and maple syrup…
…and bacon…
…please don’t forget the bacon…

They were all that was promised.

…crispy on the outside.

…warm and tender on the inside.
