More French Onion and Mushroom?

Last one, I promise, but isn’t it amazing how something so tasty, so easy can be transformed into so many delicious meals?
This time I used it for breakfast. Simple, tasty and quick. In the time it takes you to fry an egg.
Bang! Breakfast is on the table.
FRENCH ONION MUSHROOM BREAKFAST WRAP
4 servings
what you will need
1 cup of French Onion Mushroom mixture (recipe here)
4 eggs
cooking oil or butter
1/2 cup grated cheese of choice (I used aged cheddar. The sharp flavour went well with the sweet of the onion)
4 tortillas (flour ones work best. They are more bendy)
Toppings of choice (hot sauce, sour cream or Greek yogurt, salsa)
salt and pepper
putting it all together
In a small fry pan, heat oil or butter
Crack one egg into heated pan.
Top with 1/4 onion mixture and 1/4 cheese.
Cook until the egg is almost set.
Top with 1 tortilla and flip.
Continue to cook until tortilla begins to brown.
Transfer to serving plate, fold tortilla over the egg and add toppings.
Repeat, enjoy!
