PIRATE STEAK with COMPOUND BUTTER
Tonight we are grilling steak…
sweet and sassy pirate steak…
I normally don’t like anyone messing with my steak..
like my scotch…straight up with a splash of water…
and with the steak…
only a bit of salt and pepper.
Since expanding our meat grilling experiences
I thought I would try a simple marinade…
Rum and molasses with a feisty dash of chillis.
The result was a crispy caramelized coating of sweet crust on the edges
and a juicy perfectly done interior.
For a little added flavour, I mixed up a small portion of compound butter,
1 tablespoon or two of butter
1 tsp dried thyme
1 tsp dried rosemary
1 tsp grated fresh garlic
Mix all together.
1 sirloin steak (enough for 2 people)
1/4 cut molasses
1/4 cup dark rum
sea salt & pepper
Place the steak, molasses and rum in a container or plastic food bag
and marinate for 3 hours.
Remove from refrigerator 1 hour before grilling.
Season well with salt and pepper.
Grill to your preference
Tent with foil and let rest for 5 minutes before servings.
Serve with a dollop of compound butter.
