PIGGIES in BLANKETS (a Captain Cooks creation)

PIGGIES in BLANKETS (a Captain Cooks creation)

He’s back! again… I am so loving all of this company in my land galley lately.  This time my guy offered to make us his special Pigs in a Blanket.  Some sharp cheddar, weiner wraps (found in your dairy section) and this time he thought we should use meat from our fave local butcher. Cavicchi’s makes the best sausage bites, little meatballs, gluten free with the perfect blend of spices.  This time, mild Italian. To keep with the simple-no-oven-in-my-galley focus…

HONEY GARLIC SALMON – a captain cooks creation

HONEY GARLIC SALMON – a captain cooks creation

Encouraged by the delicious results and popularity of his Honey Roast Duck a while ago (recipe here),  Francois asked permission to invade my land galley once again and I’m lovin’ it!  He cooks (I’ve never had any of his creations that haven’t  been super delicious).  He cleans up after himself (how could I ever complain about that). Added to that, he’s just an all round great guy and he kills spiders for me.  How could a relationship be any more…

GREEK INSPIRED MEATBALLS

GREEK INSPIRED MEATBALLS

Just because I’m not a football fan (oh the shame!) doesn’t mean I can’t offer you something yummy to nosh on during this year’s big game. Just throw meat and all  into a big bowl, dive in with both hands (properly washed of course) and squish all of those aromatic ingredients together. Serve warm with some tzatziki for dipping and a side salad. An icy crisp beer rounds off the presentaion. I’ve added a recipe for a quick Greek Salad…

CALLIE’S CHEESEY BISCUITS

CALLIE’S CHEESEY BISCUITS

This is now one of my treasured tried and true recipes from my daughter’s stash of treasured tried and true.  Really easy to throw together, they freeze very well so make a double batch and hide half away out of the clutches of your resident bread monsters. Sometimes my daughter subs the green onion for bits of minced jalapenos and wow, do they ever go well with a bubbly pot of chili….or with a steamy bowl of soup…or just by…

DUCK SOUP

DUCK SOUP

Remember Francois’ duck-in-a-bag post from several days ago? (recipe link here in case you missed it) WELL!….I stripped that baby of it’s meat, then plopped the carcass, seasonings and veggies into my slow cooker and boiled the bejesus out of it for 18 hours.  Then I carefully pulled the remains of juicy bits of meat from the bones.  It’s surprising what I harvested…enough meat for 2 more meals and 8 cups of bone broth.  Frugal little Galley Kat! So for…

EASY SHRIMP PAELLA (pressure cooker version)

EASY SHRIMP PAELLA (pressure cooker version)

I hope you don’t feel inundated with my latest flurry of blog posts.  I’ve not been inspired to write much lately…that is until this week.  So many recipe successes have given me the push I needed during this winter down time.  While Francois uses his latest purchase to evacuate a blocked gutter, a fibreglass ladder (note the very cool orange colour) and shovels our first real east coast snow storm results,  I’m here inside a steamy warm kitchen creating and…

BUCKWHEAT ZUCCHINI MUFFINS

BUCKWHEAT ZUCCHINI MUFFINS

I have far too many blog posts on the go and not yet published.  This isn’t like me as usually I am way ahead with several weeks of delicious recipes post dated.  Is it the country seaside wintery life that’s taking my attention, slowing my steps a little more, making me want to cocoon and curl up with a good book, leading me down that evil procrastination path?  Whatever it is I must snap out of it. No better way…

HONEY ROAST DUCK (a Captain Cooks creation)

HONEY ROAST DUCK (a Captain Cooks creation)

Technically this recipe doesn’t fit my simple boat recipe criteria.  Yes, it was simple but it does require an oven of which I have none onboard.  But….when my man says he wants to cook a duck and the results are so freakin’ delicious I felt I needed to share it with you all.  There is a possibility that it could be cooked in a similar fashion tented with foil on a barbecue but we haven’t tried that yet so conventional…

STOVE TOP ENGLISH MUFFINS

STOVE TOP ENGLISH MUFFINS

I’ve had this hanging around in my data base for ages and I now wonder why I waited SO long to try it.  Got the recipe from another boater who blogged about something or other (I honestly can’t remember what it was about…so long ago) and in the conversation he mentioned making English muffins.  You mean in your boat oven I asked?  Stove top was his answer.  Well, said I. Please share!  And he did and here I am well…
