EASY CREAMY SHRIMP with SPINACH

EASY CREAMY SHRIMP with SPINACH

I’m keeping it low carb and super easy again for tonight’s supper.  Low carb because we’re trying to lose some winter hibernation weight.   And easy because this is our first-of-the-season-dining-outdoors-meal and we’ve been trying to get on top of the gardening before being back on the water for the season. Sautéing the shrimp first in garlic imparts the best flavours to the overall dish.  Simply remove them after they reach the perfect pinkness (is pinkness even a real word?)……

QUICK CHICKEN MASALA with CAULIFLOWER RICE

QUICK CHICKEN MASALA with CAULIFLOWER RICE

I’m trying out some more low carb recipes this week and am loving this easy cauliflower rice.  You grind it in a food processor or use a hand grater, fry it up in a little oil and season.  Francois said that when he closed his eyes and tasted it, was almost like eating real rice.  One whole cauliflower is more than enough for the two of us so guess what? It freezes really well.  I put the extra into a…

MAY ROUND-UP

MAY ROUND-UP

My goodness this month went fast!   We’ve been so busy dividing our time amongst getting the boat ready for her spring splash, preparing for guests and tending to getting our new-to-us gardens cleaned up that it’s left little time for anything else. I did take the time though to put together a list of your favourite Galley Kat recipes for the month of May. Simply click on the caption of each image for the recipe link. First way at…

SALMON LOAF with DILL SAUCE

SALMON LOAF with DILL SAUCE

Since we’ve been doing so much outdoor work in the garden lately, I haven’t been keeping up with supplying our land galley.  Funny really how I still provision like we are still onboard.  Cans of this and that.  Lots of grains.   Plus more and more we’ve run into friends and some family members who are either cutting back on carbs or for health reasons can’t tolerate gluten.  So I’ve been compiling a few recipes from time to time to…

TEX MEX RISOTTO

TEX MEX RISOTTO

Here’s a tasty one for you Galley Peeps.  It was inspired by one of our home delivery plant-based meals.  A simple risotto with a Tex Mex flair. You’ve probably noticed that I’m big on making my own spice mixes.  For one thing, in my tiny galley there’s precious little space for a gazillion spice containers.  And we do love our Mexican type foods so this Tex Mex combo has become a favourite.  We love a little heat too so I…

RHUBARB CAKE

RHUBARB CAKE

Here you go my Galley Peeps, the fifth and final rhubarb recipe…although we can’t seem to get enough of this final one.  So rich and dense…not too sweet….the perfect snacking cake. I have a little confession though.  Ours wasn’t totally rhubarb.  I’ve recently discovered that a vile weed, almost alien-like, that has overtaken part of our garden, is actually edible.  Apparently Japanese Knotweed with its nasty invasive root system is almost impossible to eradicate so I’ve decide to embrace my…

CHILLED RHUBARB STRAWBERRY SOUP

CHILLED RHUBARB STRAWBERRY SOUP

What do cucumbers, strawberries and rhubarb have in common?  Yes, two of them are vegetables smarty pants.  But when the three of them meet together with a touch of chocolate balsamic vinegar they become the makings of a very memorable fresh summery soup. This time of year we still depend on imported strawberries which tend to be large and watery and since chilling mutes flavours you may want to add a touch more salt, a dash more of balsamic vinegar…

ROASTED RHUBARB SHORTCAKE

ROASTED RHUBARB SHORTCAKE

More rhubarb love for you today my Galley Peeps.  I’m not sure how long I can keep going back to my little garden patch and harvest enough fresh goodness for yet another recipe but I’ll keep going until I can’t.  Over the top enthusiasm?  Maybe, but after living in a condo apartment for so many years and I can now waltz..yes, waltz…out my back door and forage for food…you might be a little over the top too. Instead of stewing…

RHUBARB MUFFINS

RHUBARB MUFFINS

Since the overwhleming success of the Rhubarb Cocktail (find the recipe here.  If you haven’t already tried it…you MUST), I’ve been in love with the rhubarb/lime/ginger combo.  So I took one of my favourite Galley Kat muffin recipes Lemon Ginger Muffins (recipe here) and transformed it into the ideal tea-time treat.  The perfect combination of tart rhubarb, a hint of lime and the bite of ginger.   This recipe works equally well for the Omnia stove top oven as it does…

RHUBARB COCKTAIL

RHUBARB COCKTAIL

How could a pot of this… Become this most heavenly nectar of the summer-time-grillin’-gods?… Well let me tell you a story… It all began with my over the top excitement about discovering we had moved into this paradise by the sea with an existing crop of rhubarb.  I watched these little crowns…. …evolve into full blown stalks of nature’s goodness.  Too much over the top?  Sorry…I even freaked out over discovering we had pussy willows.  My neighbour even suggested to…
