Sweet & Sour Pineapple Chicken
1 large boneless skinless chicken breasts
1/2 corn starch
1 eggs, beaten
Salt, pepper, garlic powder for seasoning the chicken
several tbsp vegetable oil (I used Grapeseed oil)
1/1 green pepper cut into chunks
1/2 each red & yellow bell pepper cut into chunks
1/2 cup pineapple chunks
3/4 cups sugar
1/4 cup ketchup
1/2 cup vinegar
1 tablespoons worcestershire sauce
1 teaspoons garlic powder
1/4 teaspoon coarse black pepper
Heat oil in wok
Cut chicken into 1 inch chunks, and season with salt, pepper, and garlic powder.
Dip each piece of chicken in corn starch, then in egg.
Brown chicken pieces on both sides in batches
Remove from wok and set aside
Add in pineapple and pepper chunks to wok and stir fry until crunchy done.
In a small saucepan whisk together all sauce ingredients.
Add some of the corn starch and heat until sauce is thickened
Return chicken to wok and pour sauce over all
Continue to gently simmer until chicken is cooked through
Serve over rice and enjoy!
