SOBA NOODLES with PEANUT DRESSING
6 tablespoons peanut butter
1 cup boiling water
4 tbsp cider vinegar
1/2 tbsp agave syrup (or 1 tbsp honey)
1 tsp sea salt
3 to 4 cloves garlic, minced
crushed red pepper flakes to taste
2 tsp lime
1 tablespoon sesame oil
Hot sauce to taste
Add hot water to peanut butter and whisk until combined.
Whisk in remaining ingredients adding hot sauce a tablespoon at a time at the end.
I used 2 tbsp for an extra spicy finish…
Cook soba noodles (about 5 minutes – don’t over-cook as they can be delicate).
Drain and rinse briefly, separating noodles with hands and place in serving bowl…
Add a handful of peanuts, jullienned baby cucumbers and slivers of greens onions…
Top with some of the peanut sauce and gently toss.
