STEAKHOUSE BRUSCHETTA

Want a back-of-the-boat treat for your next docktail get-together? One that your guests will be talking about for a good long while? This is it! And if you make the main components in advance (steak grilled, tomatoes etc tossed, cheesy base whipped and bread toasted), all you have to do is assemble at the last minute and you will look like the Galley Star that your boat friends have come to expect.

STEAKHOUSE BRUSCHETTA

what you will need

2 baguettes, cut into 24 slices

olive oil

1 cup mayonnaise

1 cup gorgonzola or cambozola cheese, crumbled

2 cloves garlic, pressed

2 tbsp white vinegar

1 tsp dry mustard

1-2 green onions, minced

several fresh basil leaves, chopped, about 1/4 cup

1 cup chopped tomato

1 avocado, peeled, pitted and chopped

a few grinds of pepper

juice of 1/2 lime

1 small beef filet or other tender cut, sliced into 1/2″ pieces, or about 1 cup chopped leftover steak

Meat seasoning of choice (I used my Magic Mushroom blend)

1 tbsp butter

putting it all together

Brush each slice of bread with oil and grill until browned and crispy then set aside.

Mix together mayonnaise, cheese, garlic, vinegar and  mustard.

In bowl toss tomatoes, onion, basil and avocado.

Sprinkle with a squeeze of lime juice and pepper.

Season steak pieces and quickly sear in butter until desired doneness.

ready to assemble

Spread each bread slice with cheese mixture

Place about 3 pieces of steak on each.

Top with a spoonful of tomato avocado mixture.
