SPINACH BITES

These little spinach morsels are great for a little happy hour treat
or a small pick-up snack any time of day.
Kids will love these too (a great way to inject some greens into their diet)
SPINACH BITES
1 package of fresh spinach, finely chopped
2 green onions, minced
3 eggs, beaten
1 cup panko crumbs
1 garlic clove, minced
1/4 cup melted butter
1/2 cup grated cheese
(to your taste, I used a mixture of parmesan and aged cheddar)
sea salt and pepper to taste
Mix all the above ingredients together.
Take a small melon scoop or tablespoon
and drop mounds onto your baking sheet or tin
These can be cooked either on your barbecue on a grill sheet
(about 15-20 minutes until they begin to brown, turning half way through)
or baked in a 350 ° oven for the same amount of time.
I have also cooked them on the stove top with a small bit of oil.
They work best with this method if you flatten the little balls
and turn as they brown.
They go really well served with a spicy sauce (our favourite is Frank’s)
or try with my Ranch Dressing
