SMOKED HERRING with BEET & LIME
several slices of crusty bread
1 clove garlic
1 tin smoked herring, drained
1 raw red beet, shredded
1 raw orange beet, shredded
juice and zest of 1 lime
2 tbsp fresh chopped parsley
small handful pea sprouts, chopped
1 tbsp olive oil
sea salt & pepper
1/2 cup yogurt cheese (recipe link)
In a bowl combine beets, sprouts, lime juice, zest, parsley and olive oil.
Season with salt and pepper and set aside.
Rub bread slices with garlic clove.
Spread each slice with cheese.
Divide beet topping among each bread slice.
Garnish with a sliver of smoked herring.
Serve with lime quarters.
