JENN’S BOOM BOOM SAUCE

Still on my Galley Basics kick, I looked through some Friends Faves submissions and found this recipe delight from Jenn. I love the name…Boom Boom Sauce. No idea where she came up with this name but it does come with a huge flavour explosion…especially if you make it a few hours, or even a day in advance so the ingredients have a chance to hang out and get to know each other better.
So far I’ve tried this as a chip/cracker/ veggie dip, to serve with chicken tenders and fish sticks. I thinned it a bit with some olive oil and used it as a salad dressing and is super yummy ‘as is’ as a slaw dressing. Great on burgers too. It’s really hard to pick a favourite use for this versatile creation but if I had to choose it would be to slop it very generously on shrimp tacos.
And since trying this out for a dip and spread and dressing, I thought why not as a marinade and oh my! Simple perfection! Take boneless chicken thighs, add them to a lidded container or zip baggy, add enough Boom Boom sauce to coat each piece completely then refrigerate for at least an hour or overnight.
Remove from fridge about 30 minutes prior to cooking, shake off and discard extra marinade and pan fry, grill or broil (about 7 minutes per side should do it). So juicy! So much flavour!
